IJs, een feestelijke carrousel van kleuren, geuren en smaken. Vakmanschap en de beste ingrediënten staan garant voor ongebreideld plezier. IJs verwarmt je hart, streelt de zinnen, laat je lachen, laat je intens genieten. 

Maar de wereld van ijs kent ook een minder zonnige kant, daar waar duistere praktijken eer, geweten en respect verdrijven. Soms is de ijsbranche niet ‘cool’ maar koel, kil of zelfs ijskoud. Hij staat bol van tegenstrijdigheden die soms gewetenloos worden uitgebuit. IJs kan een ambachtelijk culinair wonder zijn of een industrieel product met veel toegevoegde middelen, maar zonder toegevoegde waarde. Kleuren, geuren en smaken variëren, de kwaliteit nog meer. Het lijkt de wijnwereld wel…..

Over smaak valt niet te twisten zeggen ze. Misschien is dat maar goed ook. Sommigen houden er immers vreemde smaken op na. Er zijn er die van poep- en plassex houden en, erger nog, er zijn mensen die in een Nissan Juke rijden….

Sergio Dondoli is iemand die niet alleen smaak heeft maar ook een zeldzaam goed gevoel voor kwaliteit. Beide aspecten weet deze maestro vast te leggen in meesterlijk mooi ijs. Wie ooit zijn kleine ijssalon in San Gimignano heeft bezocht, weet wat ik bedoel. IJs van grote klasse, met pure smaken of fabelachtige combinaties die zijn talent uitsluitend bevestigen.

Dondoli is een meester ijsbereider en meerdere keren onderscheiden met allerlei eretitels. Tot zijn indrukwekkende palmares behoort ook de hoogste titel die er op het gebied van ambachtelijk ijs te behalen is; Wereldkampioen in 2006/07 en 2008/2009 als lid van het Italiaanse team tijdens de wereldkampioenschappen in Rimini.

Zelf jarenlang experimenteren, hard werken en risico’s nemen hebben hem deze titels opgeleverd. Niets kwam zomaar aanwaaien en nog altijd behoort hij wereldwijd tot een uiterst select groepje ambachtelijk ijsbereiders op het allerhoogste kwaliteitsniveau. Wie wil weten hoe moeilijk het is om wereldkampioen te worden, zou eens contact kunnen opnemen met Gelati Granucci in Apeldoorn. Hun hazelnotenijs won in 1996, als eerste Nederlandse afvaardiging, de prestigieuze Coppa d’Oro, de wereldbeker voor ijsbereiders tijdens de Mostra Internationale del Gelato Artigianale in Longarone toen deze nog een indrukwekkend deelnemersveld kende.

Maar goed, terug naar San Gimignano en de kern van mijn verhaal. Over de titels die Dondoli behaalde, kunnen de meeste ijsbereiders alleen maar dromen. Maar dromen is natuurlijk niet genoeg. Op het niveau waarop Dondoli acteert, zijn talent, de beste producten en investeringen in tijd, moeite en geld onvermijdelijk. Uitsluitend de fameuze en bijna onbetaalbare DOP saffraan uit San Gimignano, de lekkerste Smeraldo pistachenoten van Bronte uit Sicilie, de mooiste pijnboompitten van de bossen langs de Toscaanse kust bij Pisa, de wereldberoemde ‘Tonda Gentile delle Langhe-hazelnoten’ uit Piemonte, munt uit eigen tuin (!), altijd vers fruit, de bekroonde chocolade van Amedei en natuurlijk de kennis en ervaring om er met de beste machines meesterlijk ijs van te maken.

Tot zijn buitengewone creaties behoren o.a. Crema di Santa Fina® (roomijs met saffraan en pijnboompitten), Champelmo® (roze pompelmoes en mousserende wijn), Dolceamaro® (crème met aromatische kruiden), Vernaccia-ijs (naar een idee van Natalia Guicciardini-Strozzi), frambozenijs met rozemarijn, bramenijs met lavendel, ijs van gorgonzola met walnoten, Curva Fiesole (ricotta met bosbessen) en de Sangue di Bue (pittige chocolade en zure kersen). Aan deze lijst met smaken heeft hij sinds kort Campari-ijs toegevoegd,  waarvoor hij als een van de weinigen toestemming kreeg om deze merknaam exclusief te mogen voeren.

Tot de fans van zijn werk behoren vele bekenden, waaronder Alexander Solzhenitsyn, Francesco Toldo, Sergio Billé, Pierre Gagnaire, Andrea Bocelli, Prinsessen Irina en Natalia Strozzi en Tony Blair. Ook Koningin Beatrix neemt haar kleinkinderen regelmatig mee naar Dondoli om ze te verwennen met de smaken van deze maestro. Op zich zegt het niks dat een ‘celeb’ je ijs lekker vindt natuurlijk (Messi maakt zelfs reclame voor Pepsi), maar leuk is het wel….  

Naast het werk in zijn eigen ijssalon, is Dondoli ook actief in de organisatie van de wereldkampioenschappen ijsbereiden in Rimini en doceert hij aan de Carpigiani Gelato University in Anzola dell’Emilia bij Bologna. Zijn passie, kennis en ervaring deelt hij namelijk graag met nieuwe talenten en andere hardwerkende professionals.

En daar wringt hem nu de schoen. Tot zijn verdriet en frustratie, ziet hij hoe talloze ijssalons de kunst van het ijsbereiden, de ware passie en de kwaliteit van ambachtelijk ijs verkwanselen en de prestaties van anderen misbruiken. We hebben het dan niet eens over de ijsjes van Ola met hun perfecte marketing of de tienduizenden liters softijs die jaarlijks achteloos worden getapt, maar over de strijd van de makers van écht ijs, origineel ambachtelijk ijs en diegenen die niet verder komen dan smakeloze imitaties.

Wat ambachtelijk ijs precies is, is een schimmig gebied, vergelijkbaar met wijnen van biologisch geteelde druiven die verder 100% kunstmatig zijn. Ja, ijs kan gemaakt zijn van 100% natuurlijke producten, maar dat betekent nog niet dat je pistache-ijs niet gewoon voornamelijk uit soja-amandelspijs bestaat, gekleurd met spinazie. Doorgaans is vanille-ijs niet meer dan een kunstmatig met vanilline gearomatiseerd ijs en bietensaus is vaak het belangrijkste ingrediënt in bosvruchten- of ander vruchtenijs.
En wat te denken van ijs in de supermarkt? Daar kost een liter ijs minder dan een liter melk. Is er iemand die daar enige relatie met natuurlijke producten of kwaliteit kan aantonen? 

De hele ijsbranche is vergeven van kleur- geur- en smaakstoffen en echt ambachtelijke ijs, dus zonder dit soort toevoegingen, is zeldzaam. Mensen kopen nietsvermoedend Tsjernobyl-groen pistache-ijs, geel bananenijs, sorbet-ijs op melkbasis, roomijs met veel boter maar zonder room etc. etc.  De handel houdt de massa dom en (te) veel mensen slikken de verkooppraatjes als zoete koek.
 
Ambachtelijk ijs staat centraal in het leven van Sergio Dondoli en terecht maakt hij zich druk over de misleidende praktijken van zogenaamde collega’s. Jammer genoeg hoef je niet ver te zoeken om twijfelachtige praktijken te herkennen.

Nauwelijks dertig meter van de ijssalon van Dondoli in San Gimignano schreeuwen uithangborden loze kreten als ‘Home made ice cream’ en ‘The best ice cream in the world’ en ‘natural products’ over het Piazza della Cisterna.

Schaamteloos misbruikt Gelateria dell ‘Olmo de onwetendheid van de doorsnee toerist. Ze lokken hen met holle frasen naar de zaak om hun duurverdiende geld te verruilen voor een ijsje met een enge nasmaak, dat van namaak. Zonder enig respect voor Dondoli en zijn klanten creëert dell’Olmo een illusie die helaas goed verkoopt. Rijen slachtoffers spenderen geld aan een product dat misleidend is.

Jammer genoeg zijn er geen wetten tegen dergelijke praktijken. De wet is ruim, de interpretaties soms erg ‘creatief’ en de investering om dit soort misbruik tegen te gaan (te) hoog. De mens wordt geacht de wet te kennen en zelf een goed onderscheid te kunnen maken tussen realiteit en illusie. ‘Miele, er is geen betere’ is een reclame-uiting waarvan iedereen kan weten dat het een bewering is met ‘een vette knipoog’ naar de waarheid. Het probleem met de beweringen van Gelateria dell’ Olmo is dat ze deels toegestaan zijn. 

Natuurlijke ingrediënten? Ja, vast wel. Home made? Ach, ze zullen vast wel een ijsmachine in de zaak hebben waarmee ze industriële prefab-producten kunnen maken; zakje open maken, water erbij en klaar is Kees. Maar het ergste is de kreet ‘Beste ijs ter wereld’. Dat is echt absolute onzin!!!!  Er is geen enkele aanwijzing waarom ze zich deze titel zouden mogen aanmeten. Er is geen verwijzing naar welk kampioenschap dan ook en het is aannemelijk dat ze slechts misbruik maken van het feit dat er een echte wereldkampioen op hetzelfde plein gevestigd is!

Wie écht ambachtelijk ijs van de échte wereldkampioen wil proeven, doet
zichzelf een enorm plezier door dell’ Olmo voorbij te lopen en aan te sluiten bij de schare liefhebbers bij de ijssalon van Sergio Dondoli. Alleen daar vind je echt ambachtelijk ijs. Gemaakt met verse, natuurlijke producten door een maestro die het ijs ook daadwerkelijk zélf maakt en alle titels en respect eerlijk heeft verdiend.Sergio Dondoli
No warm feelings about ice cold abuse

Ice cream, a festive carousel of colours, scents and flavours. Craftsmanship and the finest ingredients guarantee unbridled pleasure. Ice cream warms your heart, caresses your senses, makes you smile, is one of the pleasures of life.

But the world of ice cream also has a dark side, where shady practices expel honour, conscience and respect. Sometimes the ice cream sector isn’t cool, but chill, cold or even freezing. It’s full of contradictions that are sometimes unscrupulously exploited. Ice cream can be a traditional culinary miracle or an industrial product with a lot of additives, but no added value. Colours, smells and taste vary the quality even more. Much like the world of wine….

‘Degustibus non est disputandum’ or ‘In matters of taste there is no dispute’ and I’m quite happy about that. I absolutely don’t want to get in any discussion about taste with people who prefer golden showers, poopsex or,  even worse, drive a Nissan Juke.

Sergio Dondoli is someone who doesn’t have only great taste, but also a rare sense of quality. Both aspects are secured by this maestro in masterly beautiful. Who ever visited his small ice cream shop in San Gimignano, knows exactly what I mean. Ice cream of outstanding quality with pure flavours or fabulous combinations that only confirm his talent.

Dondoli is a true Master of Gelato and has been repeatedly rewarded with many honorary titles. Among his impressive list of achievements adorns the highest title that can be achieved in Gelato, World Champion in 2006/2007 and 2008/2009 as a member of the Italian team at the World Championships in Rimini.

Experimenting for many years, hard work and taking risks have yielded him such titles. Nothing came easy and still he belongs to a worldwide very select group of artisan ice cream makers at the highest possible quality level. Who wants to know how difficult it is to become a World Champion, could contact Gelati Granucci in Apeldoorn. Their hazelnut ice cream won in 1996, as first Dutch delegation, the prestigious Coppa d’Oro, the World Cup for ice cream makers, during the Mostra Internationale del Gelato Artigianale in Longarone, when it still had an impressive field of contestants.

Anyway, back to San Gimignano and the core of my story. Most ice cream makers can only dream about the titles Dondoli achieved. But dreaming, obviously, is not enough. At the level Dondoli is acting, talent, the very best products and investment in time, effort and money are inevitable. Only the famous and almost priceless DOP saffron from San Gimignano, the tastiest Smeraldo pistachios from Bronte in Sicily, the best pine nuts from the forests along the Tuscan coast near Pisa, the famous ‘Tonda Gentile delle Langhe hazelnuts’ from Piedmont, mint from own garden (!), always fresh fruit, the award-winning chocolate of Amedei and of course the knowledge and experience, using the best machines to make masterly ice cream.

Among his extraordinary creations are for instance Crema di Santa Fina® (ice cream with saffron and pine nuts), Champelmo® (pink grapefruit and sparkling wine), Dolceamaro® (cream with aromatic herbs), Vernaccia ice cream (after an idea by Natalia Guicciardini-Strozzi), raspberry ice cream with rosemary, blackberry ice cream with lavender, cream of Gorgonzola with walnuts, Curva Fiesole (ricotta with blueberries) and Sangue di Bue (spicy chocolate and sour cherries). This list of flavors was recently extended with Campari-ice cream, for which he was one of the few who were given permission to carry this exclusive brand.

His fan base consists of many people, some even quite famous: Alexander Solzhenitsyn, Francesco Toldo, Sergio Bille, Pierre Gagnaire, Andrea Bocelli, Princesses Natalia and Irina Strozzi and Tony Blair. Even our Dutch Queen Beatrix regularly takes her grandchildren to Dondoli to spoil them with the maestros’ flavours. In many ways it meaningless if a ‘celeb’ likes your ice cream (Messi is even advertising for Pepsi), but it’s fun anyway….

Besides working in his own ice cream shop, Dondoli is also active in the organization of the World Championships Ice cream making and he teaches at the Carpigiani Gelato University in Anzola dell’Emilia in Bologna. He’s happy to share his passion, knowledge and experience with new talents and hard-working professionals.

And that’s where it goes wrong. To his sorrow and frustration, he sees numerous ice cream shops squander the true passion and the quality of artisan ice cream and abuse the achievements of others. And we’re not even talking about the perfectly marketed Ola ice cream or the ten-thousands of litres of soft ice cream that’s carelessly tapped every year, it’s about the conflict between the creators of real ice cream, original artisan gelato and those who do not get beyond tasteless imitations.

What artisan gelato exactly is, is a shadowy area, similar to wines from organically grown grapes that are beside that 100% artificial. Yes, ice cream can be made from 100% natural products, but that doesn’t mean that your pistachio ice cream is not primarily made from soy-almond paste and coloured with spinach. Typically vanilla ice cream is no more than artificial with vanillin flavoured ice cream and beetroot sauce is often the main ingredient in berry- or other fruit ice cream. And what about the ice cream sold in supermarkets? Sometimes a gallon of ice cream is less expensive than a litre of milk. Is there anyone who can demonstrate the relationship with natural products or quality here? The ice cream sector is full of colours, flavours and fragrances and truly artisan ice cream, without this kind of additives, is rare. People buy Chernobyl-green pistachio ice cream, yellow banana ice cream, sorbet ice cream on milk-base, ice cream with loads of butter but without any cream etc. etc. The trade keeps the million unaware and (too) many people swallow the sales pitch without thinking.

Gelato is the kingpin to the life of Sergio Dondoli and he’s justly worried about the deceptive practices of so-called colleagues. Unfortunately one doesn’t have to go far to recognize these questionable practices.

Hardly thirty meters from Dondoli’s ice cream shop in San Gimignano signboards are screaming empty slogans as ‘Homemade ice cream’ and ‘The best ice cream in the world’ and ‘natural products’ over the Piazza della Cisterna.

Shamelessly Gelateria dell ‘Olmo abuses the ignorance of the average tourist. Luring them with hollow phrases to their shop to exchange their hard-earned money for an ice cream cone with a scary aftertaste, counterfeit. Without any regard for Dondoli and  his customers dell ‘Olmo creates an illusion which unfortunately sells well. Large quantities of victims stand in line to spend money on a product that is misleading.

Sadly, there are no laws against such practices. The law is spacious, interpreted very ‘creative’ sometimes and the investment needed to prevent this kind of abuse (too) high. Every person is deemed to know the law and should be able to make the distinction between reality and illusion. ‘Miele, the best there is’ is a slogan from which every knows that this is a statement with a ‘wink’ to the truth. The problem with the assertions of Gelateria dell ‘Olmo is that they are partly allowed.

Natural ingredients? Yes, probably. Homemade? Well they may have a machine
at home capable of turning pre-fab dry ingredients into ice cream by adding water…..
But the worst is their claim to have the ’Best ice cream in the world’. That really is absolute nonsense!!!! There is no indication why they should carry this title. There is no reference to any Championship whatsoever and therefore it’s likely that they just abuse the fact that there’s a real World Champion is located in the same square.

Do yourself a huge favour by passing dell ‘Olmo and join the ice cream lovers gathered in front of  Sergio Dondoli’s ice cream shop. Only here you will find real artisan Gelato.
